One lazy sunday.....

hehehe...actually, Im lazy every day.... but this morning... made nasi lemak for brunch. and yesterday, while sorting the kichen out...jumpa pulut tinggal sikit. So I decided to make my kids favourite kueh... Serimuka. Unfortunately, my kukus is very small... so I decided to just steam bake the kueh. Using kak liza ( thanks to kak liza) recipe. This morning.... walla.... my kids attacked the kueh...sehingga menjilat jari.

SERIMUKA
Lapisan Bawah:
1 cawan pulut
1 cawan beras pulut
2 1/2 cawan santan cair + sikit garam
Cara
1. Kukuskan semua bahan dalam loyang sehingga masak.
2. Minyakkan sikit loyang lain dan tekankan pulut yang telah masak tadi.
3. Kukuskan semula pulut dan tuangkan adunan bahagian atas.
Lapisan Atas:
1 cawan santan pekat
1 cawan jus pandan + warna hijau
1/2 cawan gula
1/2 cawan tepung gandum
1/2 cawan tepung kastad
1 biji telur
1 s/t garam
Cara
1. Gaul rata semua bahan dan tapis.
2. Tuangkan perlahan-lahan atas pulut tadi.
3. Kukuskan lebih kurang 30 minit.
4. Sejukkan dahulu baru potong.

Nasi Lemak

Nasi Lemak Kampung
Ingredients
300g long grain rice
2 shallots
2 slices ginger
1/8 tsp fenugreek seeds ( halba )
1 tsp salt
375-400ml coconut milk (from 1/2 a grated coconut)
2 pandan leaves, knotted
Method:
WASH rice until clean then drain. Put rice, shallots, ginger, fenugreek and salt in a rice cooker. Pour coconut milk over the rice. (The level of the coconut milk should be 2cm above the level of the rice.) Cook rice until dry then use a wooden ladle to loosen the grains.
Sprinkle the rest of the coconut milk over the rice. Give it a stir with a pair of chopsticks to distribute the milk evenly. Stand for 10 to 15 minutes to allow the rice to absorb the coconut milk. Keep rice warm before serving with other condiments.
Sambal Ikan Bilis
100g ikan bilis , soaked and washed
3 tbsp oil
1 Bombay onion, sliced
2 tbsp chilli paste
Pounded ingredients:
5 shallots
2 cloves garlic
1 stalk lemon grass, thinly sliced
1/2 tsp belacan granules
Seasoning ingredients:
1/2 tsp ikan bilis granules
1 tsp sugar or to taste
2 tbsp lime juice
2 tbsp water
Method:
HEAT oil in a wok, saute pounded ingredients, chilli paste and belacan until fragrant. Add ikan bilis and big onions and stir-fry well.
Mix in lime juice, water and seasoning ingredients. Mix well. Dish out and serve with nasi lemak .

Ayam Madu
Bahan-Bahan:
6 ketul ayam
2 cm kulit kayu manis
4 kuntum bunga lawang
1 cm halia
2 batang serai
½ biji bawang besar
6 ulas bawang putih
8 tangkai cili kering
4 sudu besar sos cili
8 sudu madu
Cara:
Bersihkan ayam dan gaul bersama kunyit serta garam. Goreng hingga masak. Kisar halia, bawang besar, bawang putih dan cili kering. Tumis bahan kisar bersama kulit kayu manis, bunga lawang dan serai yang diketuk hingga naik bau. Masukkan sos cili dan madu. Rasakan garam dan bahan perasa. Gaul ayam hingga rata dan bolehlah dipadamkan api.

3 biji telur (dipukul)
1 cawan beras (ditumbuk halus)
Sedikit garam
Bahan digiling halus:
1 sudu teh jintan manis
1 sudu teh jintan putih
1 sudu teh lada hitam
1 sudu teh ketumbar
Cara:
Gaulkan ayam dengan bahan-bahan yang telah digiling, perapkan selama 1/2 jam. Celupkan ke dalam telur, kemudian digolekkan ke atas beras yang telah ditumbuk halus. Panaskan minyak dan gorenglah hingga masak.
