Favourite Chocolate Cake

Favourite Chocolate Cake
In a pan place the ingredients below and heat on slow fire.
250g unsalted butter
250g plain chocolate (70% cocoa)
100ml very strong coffee- espresso is ideal
3 tsp vanilla essence
Then leave to cool.

In a seperate bowl, whisk the ingredients below together.
350g light soft brown sugar
4 eggs
Then slowly add the chocolate mixture and mix well.

Add this in:
150 fl oz soured cream
Mix well.

Sift all this ingredients together:
250g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda

Then using a wooden spoon stir in the dry ingredients above to the chocolate mix and combine.
Pour into two lined cake trays and bake in the oven on 185 for about 30 minutes.

Almond Cream Cheesecake

Almond Cream Cheesecake
1 1/2 cups butter, softened
1 (8 oz.) pkg. cream cheese, softened
3 cups granulated sugar
3 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
6 eggs
1 teaspoon almond extract

Heat oven to 300 degrees. Lightly coat a 10-inch fluted tube pan with non-stick cooking spray; set aside. In a large mixing bowl, beat together butter, cream cheese, and sugar on low speed until smooth. Stir together flour, salt, and soda in a medium bowl. Add flour mixture to cream cheese mixture alternately with eggs, beating on low speed after each addition. Beat in extract. Spoon into prepared pan. Bake for 1 1/2 hours until top springs back when lightly touched and a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan. Cool completely on a wire rack.

Kengkawan semua sebuk cerita pasal Makloobeh ni ... maksud dia 'nasi terlangkup'. Rasanya masakan timur tengah ...

3 cups basmati rice – wash and soak in hot water for 20 minutes then drain
1 whole chicken – cut into 8 pieces (I use boneless, mix with liver & gizzard)
1 large eggplant – peeled and sliced length-wise
1 small onion – diced
1 large onion – sliced length-wise
2 cups cauliflower florets
¼ cup pine nuts or almonds
½ teaspoon black pepper
½ teaspoon allspice
1 teaspoon salt
2 tablespoons unsalted butter
1 large tomato
2 bay leaves
6 cups hot water
2 tbsp olive oil
3 cups cooking oil
Preparation for Makloubeh
In large pot, melt 2 tablespoons unsalted butter on medium-low heat; add diced onion and sauté until golden.
Add chicken pieces and bay leaves. Stir chicken pieces to coat. Cover and let simmer for ten minutes or until water is absorbed, stirring frequently.
Add 6 cups hot water to chicken and bring to boil on medium-high heat, skimming the froth from the surface. Boil until chicken is cooked. Remove chicken pieces from broth and set aside. Save broth. Discard bay leaves.
In deep skillet, heat 3 cups cooking oil. Fry sliced eggplant until golden brown. Remove and set aside. In same skillet, fry 2 cups cauliflower until golden brown. Remove and set aside.
In small pan, fry sliced large onion in 2 tbsp olive oil until golden, then remove. In same pan, fry ¼ cup pine nuts or almonds until golden, then remove.
In a bowl, mix 3 cups short rice with salt, pepper and allspice.
In large pot, begin to evenly layer bottom of the pot starting with sliced tomato. Then add fried eggplant, cauliflower, sliced onion and chicken pieces.
Cover chicken pieces with rice mix.
Pour enough broth to completely cover the rice.
Cook on high heat until it comes to a boil. Cover and simmer on low-heat for 45 minutes to 1 hour or until broth is absorbed.
Remove and let sit for 10 minutes.
Flip pot of Makloubeh onto large platter and lift. Do so carefully so as to not lose the shape of the dish. Garnish with fried pine nuts or almonds. Maklouba is best served with a garden salad and sour cream.
